Another week, another recipe!! And this week was another one with my favorite spice, cardamom.
To be honest, this was kind of a fail on my part for presentation. The recipe called for a 6-cup bundt pan but all I had was a 9-cup bundt pan. So I did bake it for less time, however it came out looking more like a large donut that a beautiful, tall bundt cake.
I attempted to make it look better by dusting it with powdered sugar (I don’t have a sifter so it didn’t go too well). And when that didn’t look good, I made a simple powdered sugar glaze with a little vanilla bean paste and cardamom to drizzle over the top, making it look slightly more appealing.
All appearance aside, this cake was delicious!! I couldn’t stop nibbling away at it and loved it for an afternoon coffee break, exactly what it was made for (just like all the other recipes in this book).
I will definitely remember this recipe for future need, but next time I’ll make sure to either use a smaller bundt pan or make the recipe 1.5x as big (math is coming in handy).
